These wings you can either marinade overnight or if you are doing them quick, then baste the chicken at least twice while cooking. Leaving them to marinate overnight keep them juicy and help to tenderise them
- 1-1.5kg chicken wings, optional tips removed and separated into drummettes and wings
- 2 cloves garlic, smashed (2 teaspoons of crushed garlic from a jar also works)
- 4 cm piece ginger crushed (2 teaspoons crushed ginger from a jar works)
- 1 lime, zested and juiced (lemon is great replacement)
- 3 Tbsp light brown sugar, packed
- 1 Tbsp sriracha sauce (2 for medium, 3 for hot, or your favourite chilli sauce to taste)
- 3 Tbsp unseasoned rice vinegar
- 3 Tbsp soy sauce
- 4 Tbsp hoisin sauce
- 1 1/2 tsp kosher salt
- 3 Tbsp sesame oil
- *fresh coriander, lime wedges, and sesame seeds for garnish
Step1
Prep chicken and pat dry. Mix all other ingredients to make the Marinade. Place chicken in bowl and mix the with marinade, rest in fridge for 30mins-24hours.
Step 2
Prep BBQ, Want it to be steady on 190c give or take 10c, maintain this temp throughout the cook.
If Charcoal, have the coals off to the side or use a vortex style device with coal in the center and chicken around the sides of the kettle. If it was a short marinade, then baste the chicken 2 times during the cook.
If Gas, use a smoker box, add your favorite pellets or chips. If is was a short marinade, then baste the chicken 2 times during the cook.
Step 3
With the left over marinade add to a saucepan and bring to the boil, then leave to simmer for 15 or so minutes, till it slightly thickens. This is an important part as raw chicken has been in the marinade.
TIP: if using sesame seeds, add to a small saucepan and heat gently till toasted, a minute or so.
Step 4
Place chicken directly over the coals or flame if using gas for a quick last minute crisp/cook, do not leave unattended, it will flare up. Cooked chicken needs to hit 74c minimum at the bone.
Step 5
When the chicken has some nice little crispy bits add to a stainless steel bowl and cover with the reduced marinade, add garnish like sesame seeds and give it a good mix before serving.
